When it comes to midweek meals frozen pizza always ranks high on the list of easy meals to make after a tiring day at work. However, if I have more time I like to make more of an effort and do a homemade pizza as not only does it taste better but it’s also a great way of using up any leftovers you may have lying around. And just think of all the fun you can have coming up with new pizza combinations.
When making the dough for your pizza base it can be easily adapted so you can use just one type of flour or a combination of your favourite types to give you more variety. For example, I like to use spelt flour as it has a lovely nutty taste and it’s much easier for me to digest.
Alongside the pizza you can’t beat a good slice of garlic bread so instead of just making pizza you can easily adapt the dough to make some of your very own garlic bread. But be warned it can be very moreish!I made pizza on two occasions over the New Year and used the following ingredients.
- Passata
- Pepperoni
- Blue cheese
- Chilli flakes
- Left-over chilli olives
- Mozzarella
- Goats cheese
- Fresh basil
- Sundried tomatoes
- Fresh tomatoes
- Passata
- Pepperoni
- Left-over cooked chicken
- Blue cheese
- Goats cheese
- Chilli flakes
- Fresh Tomatoes
We like our pizzas thin so next time I would switch the passata for red pesto as this is much lighter and won’t make the base so wet.
- Garlic puree
- Butter
- Crushed fennel seeds
- Chilli flakes
- Blue cheese
There is a third option so you don’t have to go to all the trouble of making your own base. You could always cheat and use a cheese and garlic flatbread and just add whatever additional ingredients you wanted!
